Creamy Oyster Mushroom Soup

Ingredients

1 Tablespoon olive oil

1 onion

1/2 c diced celery

2 cloves garlic

25gms butter

250gms oyster mushrooms (cut into lengths)

1/2 c diced carrots (optional)

2 Tablespoons flour

splash of sherry

2 1/2 c chicken stock

1 tsp thyme

250ml cream or milk

Salt and Pepper

Method 

Put olive oil, onion and garlic in a pan and cook for 5 mins.

Add celery cook for a further 3 mins 

Add butter, mushrooms cook on high for 8 mins

Stir flour into mushrooms, add sherry, chicken stock and thyme 

Cook for 30mins stiring regularly

Add cream or milk stir until well combined

Salt and pepper to taste
