Posh Mushrooms on Toast

Ingredients

1 tablespoon olive oil

300g mushrooms 

1 clove garlic

200g baby spinach

2-3 sprigs thyme

4 slices sourdough bread, toasted

2 tablespoons toasted pine nuts 

250g hummus 

chopped parsley

Method

Heat oil in small pan, fry garlic, thyme and mushrooms until slightly browned, add spinach and stir until wilted.

Spread hummus onto toast, top with mushrooms, sprinkle over pine nuts and parsley.
